Last week I had buttermilk that was about to expire, a few old bananas and voila! It was the perfect combination for Banana Bread! There is nothing I enjoy more than warm Banana Bread with a dab of butter – yum, yum, yum! There are several recipes that I have used for banana bread through the years. I really like this one the most because it is always so moist! ENJOY!
Banana Bread
3 med. bananas, mashed
2 eggs
1/2 c. butter
1 tsp. vanilla
1/4 cup buttermilk
1 1/2 cup flour
1 cup sugar
3/4 tsp. baking powder
3/4 tsp. baking soda
1/8 tsp. salt
Mix well bananas, eggs, butter, vanilla and buttermilk. Combine flour, sugar, baking powder, baking soda and salt. Add flour mix to banana mixture. Mix for 1 minute. Pour batter into greased and floured loaf pan. Bake at 350º for 35 minutes or until toothpick comes out clean.
Hot out of the oven, now all you need is a dab of butter!
