This weeks recipe is from my Aunt Terri, she started making this years ago and my family LOVES it. I love to make this just to have at our house for breakfast but one of my favorite things is to take it to friends. When I need to take a meal to a friend I love to add this so they will have something fun for breakfast. No matter who you make this for you will definitely want to make more! Yum, yum, yum – ENJOY!
HOLLAND COFFEE CAKE
Grease and flour a 9 x 13 pan
MIX with fork or pastry cutter
2 1/2 cup flour
1 tsp. nutmeg
3/4 cup sugar
1 tsp. salt
1 cup brown sugar
3/4 cup oil
SET ASIDE 3/4 cup mixture for topping.
ADD to the topping mixture:
1/2 cup chopped pecans
2 tsps. cinnamon
MIX until crumbly
ADD to ORIGINAL mixture:
1 cup buttermilk
1 beaten egg
1 tsp. baking soda
Pour into pan and sprinkle with topping
Bake 350º for 30-35 minutes
Serve warm or at room temperature.
